Ingredients

Large egg, beaten |

Vanilla extract |

Butter, unsalted |
| 1 cup |
Maple syrup |
| 1 Tbsp |
Pecans, crushed |
| 1 cup |
Milk |
| ½ tsp. |
Cinnamon, ground |
| 2 slices |
Brioche or Challah bread, thick sliced |
| ½ cup |
Banana, fresh sliced |
| 3 slices |
Smithfield Naturally Smoked Applewood Bacon, cooked |
| 2 Tbsp |
Fresh mixed berries (or berry of choice) |
Directions
- Combine beaten eggs, milk, vanilla extract, cinnamon and salt in a large bowl, mix well. Dip sliced bread into batter and let it soak up the mixture for 2 minutes.
- In a medium sauté pan over medium high heat add 1 tablespoon of unsalted butter and melt. Add sliced bananas and sauté until lightly browned, approximately 3 minutes. Add maple syrup and simmer for 1 minute then set aside.
- In a large sauté pan add 1 tablespoon of unsalted butter and melt over medium high heat. Add batter dipped bread and sauté each side until golden brown, flip and repeat. Make sure toast is completely cooked through and the center is not soggy.
- On a plate, top one piece of toast with sautéed bananas, slices of Smithfield Bacon and any remaining maple syrup. Place remaining slice of toast on top followed by a sprinkle of toasted pecans and mixed berries.
